The build sheet does have a date on it, block #10, along with a schedule
number.  I believe it's the date the order went in to build the car and not
necessarily the date it rolled off the line although, unless there were
problems, it'd be within a day or two at the most.  

 

GM does have published VINs reported for the last of each month so one could
interpolate a date within a day or two but there have been some
discrepancies found in the form of VINs found higher than the end-of-month
reported numbers.

 

The Fisher Body plate will also give you the month and week the body was
assembled.
